Genius. The first word used to describe him. Or Crazy. It’s a fine line. He crosses it at random, but with precision. My shutter has a tough time keeping up. Cristiano’s L’Imbuto in Lucca is a wonderland.
The kitchen is his playground, and coming out of it are some of the most inventive dishes I’ve ever eaten: wild rucola picked from nearby dunes; forest moss; veal spleen; fresh ravioli stuffed with cuddle fish.
He is excited, fearless, uninhibited. He’s a culinary Jimi Hendrix that’s pushing the extreme, while creating something beautiful at the same time. His food is a gastronomic ‘trip’; you’re not exactly sure where you’ve been, but you want to go back.
