Genius. The first word used to describe him. Or Crazy. It’s a fine line. He crosses it at random, but with precision. My shutter has a tough time keeping up. Cristiano’s L’Imbuto in Viareggio is a wonderland.
The kitchen is his playground, and coming out of it are some of the most inventive dishes I’ve ever eaten: wild rucola picked from nearby dunes; forest moss; veal spleen; fresh ravioli stuffed with cuddle fish.

He is excited, fearless, uninhibited. He’s a culinary Jimi Hendrix that’s pushing the extreme, while creating something beautiful at the same time. His food is a gastronomic ‘trip’; you’re not exactly sure where you’ve been, but you want to go back.

We ate at Chef Tomei’s new L’Imbuto Ristorante in Lucca last night. So creative…. whimsical….and delicious. We loved it.
