There’s nothing more organic than family. In a way, your family defines who you are and what you do. In Italy, it’s also the foundation of numerous food producers. I spent last Saturday with the Savigni’s, owners of Macelleria Savigni in Pavana Pistoiese.
Together with a small staff, Paola, Fausto and their 2 sons produce and sell an assortment of bio salumi and coldcuts. All cured meats are made by hand and delicately spiced with pepper and Cervia salt.
At their Azienda, located in the green Apennines, there were many families. The pure bread Cinta Senese pigs, the cross bread Rustici Sambucani, chickens, horses; they all share a common land. There’s an immediate sense of respect spending a day here. For the land, the animals, the community.
Here you can get a real understanding of what organic farming is really about. It’s about purity and respect, not marketing.
