The Vicidomini family has been making pasta since 1812. Today you can still find them in the city center of Castel San Giorgio; a small town in the province of Salerno. Luigi and Mario Vicidomini are sixth generation pasta artisans. Together with their wife and children they still produce pasta respecting the family tradition.

We are welcomed by Stella Vicidomini who leads us to the workshop in the back. Father and son are carefully hanging today’s spaghetti in the drying room. This is the secret of artisinal pasta: it is naturally and slowly dried with the help of a fan. No high heat chambers that are used by industrial producers. Creating delicate and excellent food takes time … the Vicidomini’s have had more then 200 years to perfect their skill.

I walk out with some of my personal favorites: Eliconi, Mezzi paccheri rigati and Paccheri ondulati.
